The key to fried rabbit, like Squirrel, is to brine it first. I brined it for 4 hours and then soaked overnight in buttermilk with a little cayenne pepper, oregano, sage, red pepper flakes, white pepper, and hot sauce. Rolled in flour and fried at 325 for 12 to 20+ minutes depending on the cut. The little flank cuts finish first (delicious), while the rear legs, tenderloins and rib cage take some time.
