Did you fillet his cheeks? A walleye that big should have good ones.
Seriously, the white meat between the eyes and the gills are like scallops.

they are good eating, I need to get the new registration for my boat and head out and try to catch a few Caught a couple on Dale Hollow,pretty good eating. I plan on being at dale hollow for a week this summer to catch walleye, and smallmouth, if there are any left. Dont know a thing about catching Walleye there,just caught a couple on accident,but summer fishing for smallmouth on Dale Hoolw will be tough,plan on night fishing if your gonna catch many.March ,April,May is the time to be there,once the water gets hot,they go DEEP
