Me I stick with Crappie Catfush Bream and bass. But my neighbor will fight you over a drum, I have never eat one was just wondering what I was missing. I hear Gar are good to just never had one.

crappie, bluegills, white bass, yellow perch mainly. I've tried the gar, imo, a lot of work for mediocre at best.
I've never eat drum, but I have some friends form NC. They always come bowfish with me every year. They will take every drum we shoot. They love'em.

My favorites are crappie, small catfish under 5 lbs, yellow perch, and sauger whenever I can catch one. Occasionally maybe white bass or yellow bass, don't really care for stripers. A couple of folks mentioned drum, a crappie size drum from about 10" to 14" is pretty good eating, similar to white bass in taste. Big bream at least 8" or 9" that are filleting size are good too. I used to like trout, but don't mess with them anymore.

Love sauger/walleye, crappie, catfish, trout, bream. I'll eat bass, but it's not my favorite by all means. Basically I think all fish can be good if you know how to cook that species.
I've never ate drum, carp, or gar, but maybe this year I'll try it.
But DO NOT eat gar eggs. They are poisonous.
