I've had Beaver tail many times. Just like most wild game the butchering is the important part. Beaver have some nasty glands that will ruin the meat if your not carefull. http://ushotstuff.com/wg/BeaverSmp.htm
I agree - I have seen someone clean one and was talking about the scent glands being really potent.
I had the chance to shoot one about 10 feet from me during duck season, but passed on the opportunity because I didn't want to spend the rest of the morning preparing it. After all that, I didn't kill a single duck and wished I had shot the beaver.

meat is really good,take time to clean around the castor glands most important part !! we cut the backstrap up seasoned just as you would deer and fried in skillet.to me it had a woodsy morel mushroom taste to it very good !!

Beaver....mmmm.... tastes like chicken.....no not really. I'd say it tastes like a beaver ,prolly pretty good too. Next time I see one I may have to find out what the buck tooth water joker tastes like.

Tomorrow I'm going to fry up some beaver nuggets and put the rest on the smoker.

I want a detailed report. We have dozens of those satanic rodents flooding parts of our farm. If you find a good method I might have to keep a couple.
