Northern vs Southern fairy tales

Friend of mine that grew up in the north but has lived in Tn for the past 30 years recently said there is a difference in how fairy tales start depending on where you live. She said that all fairy tales up north start out with "once upon a time." She then went on to say that she has learned that southern fairy tales start out as "honey, ya'll won't believe this." $\:D$
