If you want to put it in the crock pot, I would only use enough water to cover it. However, I intend to cooks a few squirrels down for stock this year just for this purpose.

Mike TWRA released a statement 2-3 years ago to not eat the heads,CWD has been found in the brains,they were requesting heads to be sent in,i'm thinking cecil3030 sent some in

If you like dark meat from chicken, you can substitute squirrel for it in all kinds of ways. Casseroles, pot pies, and dumplings are my favorites. All of those approaches start with putting the squirrel in the crockpot for at least a few hours, then pulling the meat from the bone.
I also put mine in the slow cooker prior to frying, and generally fry with salt, pepper, and flour only. In that case, I cut each limb off, and then cut the body in half just below the ribs to give 6 pieces (unless something is busted up so bad that it gets tossed).

My preferred method for squirrels is this:
1. Brine it 2. Marinade it with the desired flavor profile 3. Mix together the seasonings or sauce for the desired flavor profile and rub/brush 4. Grill it while brushing with butter mixed with the desired seasonings and sauce 5. Wrap in foil and let it bake for another 20 minutes
Eat it whole, off the bone
Favorite profiles: Jerked, Southwestern/Chili rub, Asian, Memphis BBQ, North Carolina BBQ

All rabbit recipes are interchangeable with Squirrel recipes. My experience looking at recipes are that fried Squirrel recipes tends to not be so well thought out. However, there are many really good fried rabbit recipes which you can follow for Squirrel and get excellent results.

It involves no preparation and you can eat a squirrel within minutes of killing/skinning. You can do it with a older squirrel, but it may be a bit of a jaw work out.
