Fishing from a canoe?

Where are some good and safe fishing areas in the state for fishing out of a canoe? I plan on trying the Buffalo when at my farm but would like to start canoeing / fishing across the state. I will mostly be in Middle TN.

If you ever come east, the lower Ocoee is some of the best fishing around for just about anything you want to catch. I'm sure the state record spot is swimming in there!
