ha... we have all done some of that. although there are a couple I am careful not to ever do...

Nice article.
My worst sins are overcrowding the pan and (not mentioned) trying to turn meat too soon in the pan.
Another one that confounds the crap out of me is trying to season meat with a crust, browning the meat, but the crust stays stuck to the bottom.

Inferior ingredients is a big one. -don't skimp on spices, herbs etc. its makes a huge difference.

I'm with you TAFKAP, overcrowding the pan is one of my worst traits too.
Gummy rice is my biggest problem though. Thats actually how I found that article. I was trying to figure out what they hell I was doing wrong. I am going to follow their suggestion the weekend for my annual Super Bowl gumbo.

Used up an entire bottle of the Tellicherry Black Pepper in under 3 weeks.

On Christmas eve we were next door having a few margaritas. When we left Swanky's I decided to pick up a few last minute stocking stuffers. Fifty dollars later I left with a very small bag. Expensive but their spices add extra great taste to any dish I have used them in.
OOH RAH! Next time you feel like dropping a paycheck in there, try these: 1) Penzey's Cinnamon 2) Black & Red (cayenne & tellicherry mix) 3) Shallot Pepper 4) Northwoods Fire 5) and in case you didn't get it last time, Mural of Flavor I love going in that store and just tasting everything they have. It's my modern day version of a head shop
