He posted a picture the other day when he first hunt them. He serves them grilled. Behind his restaurant he has a smokehouse, so I think he hangs them in it.

Why are they skinless? It'd be hard to do much with a skinless quail.

I thought it looked skinless, myself, but there seems to be the little flap from leg to body. I wonder if the skin just browned up to look that way after smoking.

Maybe you are right. Closer inspection and I do some skin. I don't think you could smoke a skinless quail... unless you were looking to make some leather Christmas tree ornaments.

Seems to me you'd have a difficult time holding a whole bird together without it falling apart.
