FUNNY! Moral to the story -- souse is to ONLY be eaten cold! I like it occasionally.

Well, it was pretty good cooked into an egg scramble; better if cooked in a dark kitchen.

And this stuff is to spam like a hobo is to Earl of Sandwich

I bet if you ground up a whole entire pig, it would still not have all the parts required to make souse... or spam, potted meat, scrapple, etc...

Commonly refered to as "Hog Head Cheese " I have been told a hog is one of the few animals you can eat from "the rooter to the pooter.

I enjoyed your story.

I happen to like souse but that stuff you get at Kroger is no where as good as a good home recipe.

Years ago I went to a hog hunting operation in TN with my 9 year old son. After we killed the hog it was hanging in the processing area. One of the workers came over, reached up and cut the hogs testik...testo...balls off and was holding them like you would a bag of marbles. My son asked me why he did that and what he was going to do with them. The guy overheard and said to us, "best eating on earth, if you don't want 'em I'd like to have 'em"

I have a freind who owned the Shelby Forest General store. There are always a bunch of ole men who hang out on the porch everyday. The store cooks bugers and whatever else on a griddle top. Everytime he hired a new girl the ole men would ask for a grilled souse sammich....and like Nimrod said it just melts. The ole men got a kick out of it..... \:D
