I usually filet mine. I also have a fear of getting a bone stuck in my throat.

leave the tail and head on. when the fish is cooked, flake the meat off one side with a fork. grab the tail and get it started separating from the other side and just peel every bone out of it.

I've seen it done that way, too. We cut the heads off of ours, though. Otherwise, you can just peel the entire skeleton off.
I still like the fillets, though.
