I bet if you ground up a whole entire pig, it would still not have all the parts required to make souse... or spam, potted meat, scrapple, etc...
I am pretty sure I watched my great grandmother chase the squeal around the kitchen after she got the head scraped when she was making spouse. I was told not to ask what was in it, just eat it.
