Man, one in every crowd hehe... depending on the types of steel that has been folded to make the damascus, it can effect the hardness of the finished product, what angle you sharpen it at and how long it will keep an edge...

1085 and 15n20, in the high 50's hardness. kitchen knives i sharpen on the kitchen side of the worksharp 22.5 i think. as for holding an edge, that is a hard answer, lol, i have never had a problem with my knives dulling quickly. i skinned 4 wild boar one night last fall with my damascus skinning knife and it would still shave arm hair afterwards. im not saying every knife will do that though.
