Ive had some sitting out that was made in the first week of December, finally finished it off a week ago. It was pretty dry when it came out of the dehydrator.

Depends on if you use cure or not. The home-made stuff with no preservative added is supposed to be kept in the refrigerator. I've seen some "interesting" stuff growing on jerky that wasn't stored properly.
I've never had a bag of mine that I made with the cure go bad from sitting out on the counter. I don't dry mine to the point of it being dusty, but it usually spends 12-14 hours in the dehydrator.

The guy that makes mine told me to NOT put it in a plastic baggie and it would last longer. Plastic, he said, would cause mold to form on the meat

Not sure, but I found some in my duck hunting gear a couple of weeks ago that had been there since January 2011. It looked and smelled fine, but I didn't chance it!

There are a lot of variables that go into how long meet will last. If u use curing salt and you use lean meet and dry it completely it will last for a long time. Plastic hold moister in so if you put it in a bag and there is still air/moister in the bag bacteria will grow. But if you seal it in airtight plastic with no moister it will stay for a long time. Of course mine disappears with in a week or two so I don't worry much about it.
