I checked out Nourishing Traditions by Sally Fallon from the library today. I was flipping through it this afternoon and came across her recipes for Chicken and Beef stock. On adapting the beef stock to venison, she recommends including the deer feet and a section of antler. On adapting chicken stock to turkey, she recommends including the turkey feet.

Has anyone heard of this? Tried it? Poser, you should be all over this!

Its not that surprising. Both the hooves and the antlers contain plenty of nutrients. I do not use the deer hooves simply because they have a lot of dirt on them. I do often give them to the dogs, however. Antlers, I tend to keep those.

I do cook down duck and turkey feet along with the rest of the carcass for stock.

Feet tend to have a lot of connective tissue in them...when broken down via long cooking times its a good addition to a stock.

Be careful with that antler...I used to work with an old Korean guy that begged me for deer antler. I brought him the skull cap of a small 8 point we killed and a few days later he came to work with the antler sliced paper thin. He invited me to drink some tea made with the antlers and I accepted. We went to his desk after we hd got two cups of hot water from the breakroom and he proceeded to steep the antler slices in the hot water. After 3 to 5 minutes we started sipping the tea and he was pleased with the taste. I asked him what the antler tea did for his health and his answer was that it made your pecker stand up tall and hard. \:D \:D

I'd hate for you to eat some soup made with antler infused broth and accidently flip the table over when you got up from the meal...LoL
