Venison Neck Osso Buco.
Started with carrots, sliced onions, celery, bay leaves and fresh sage.
I sawed the neck into 4 pieces:

Then I added salt and pepper, rolled them in flour and browned all 4 sides of each cut:

While this was going on, I had the crock pot cranking up the vegetables in 2 quarts of venison stock and some red wine.
Placed the browned neckbones in the crock pot and let them cook for about 6 hours.

Hot, steamy and savory Osso Buco. I served over mashed potatoes.

OK, dumb question.
Is the neck roast a hunk of meat you trim off the neck, or is it the entire thing, lopped off between the ears and the shoulders?

OK, dumb question.
Is the neck roast a hunk of meat you trim off the neck, or is it the entire thing, lopped off between the ears and the shoulders?
That's the full monty. I saw them right at the base of the head and again at the top of the shoulders. I have two bucks necks that weight 12 and 15 pounds each. -those should be fun.
