What use to be our traditional lunch on opening day. Someone would volunteer their kill and we'd take one backstrap out, slice it about 1/4", dry wet dry with buttermilk and flour and fry in an electric skillet on the back patio. Fold a piece of white bread over it and eat and wash down with a sun-drop.

So easy a Caveman can do it:

prepare biscuits/bread of your choice

Heat oil in skillet

Slice loin into thin medallions 1/4 inch or so

Season with salt and pepper

prepare flour with what ever seasonings you like. just salt and pepper is fine

coat meat in flour and cook in oil til done

set meat aside and put skillet back on heat

add some flour to your oil in skillet to make roux

once roux is thoroughly mixed add milk
