E. Coli lives in the intestines of most animals. The issue comes with cross contamination. If E.Coli were to somehow get on the loin, steak, or roast, then the searing of the surface would kill all contaminants. The only concern would be if the animal was gut shot and the E. Coli that is located in the intestines were to enter into the blood stream and then be distributed into the muscle. Typically, if E. Coli contamination was to happen, then it would only be located only on the muscle's surface.
Ground beef or venison: When ground the surface moves to the inside, outside, & everywhere. This is why all ground meat is recommended to be fully cooked.
I really like my steaks Rare/Med. Rare.
