Que up the 2001 Space Odessey theme. This was an Amazing meal, right here. The peas were Cooked in salt cured bacon and seasoned with Spanish smoked paprika and fresh herbs. The greens were Cooked in Venison stock and hit with some homemade tobasco pepper vinegar. We were out of cornmeal, so the squaw cooked up some homemade Parmesan & Cheddar biscuits. Incredible!

I didn't get pictures of mine, but they sure are good. Eating leftovers right now.
...I am a little disappointed to see none of yall used a Ham Hock.

Valid point. Ham Hocks take a good while to breakdown. They do add a distinctive flavor, but, with bacon or fatback, you can have your greens ready to eat inside of 90 minutes.

They're tough to come by at 9:30 on NYE......I've seen smoked turkey used in a number of soul food joints that are trying to lighten up their offerings a bit. It worked great in mine.
