What did you use for a smoker HD? Temps you used? Meat temp you reached?
I did one at Thanksgiving and it was awesome, but I think I should have let it cook another hour maybe to further tender it up.. Slicing against the grain made a big difference. It was one of the best tasting pieces of meat I've ever smoked !!

I kept on 230 degrees and got the meat up to 175 to 180. I put the ingerdeants in the cooking forum

looks good, I usually wrap mine after about 5 hours, I also cook it to 190.
Do you do fat side up or down. I have always put it in fat side up.

I had mine fat side down. Thinking most would cook out and help with keep the juices in.

Oh it was a electric smoker. The first two hours I used hickory wood chips. Then I switch to soak in water apple wood chips. In my water pan I had apple juice
