Looks like that would be good to make a sandwich. Last Friday I had a guys homemade pastrami with whole grain mustard, pickled green tomatoes on a pretzel bun. Best sandwich I've had all year. Could probably do something similar with this venison.

My wife makes deer roast very similar to that recipe. It is some good stuff.
