It looked like beef before cooking, but darker and richer red. Like grass-fed beef.

Elk steak is the BEST wild game meat I've ever eaten, hands down. Unbelievably tasty with a hint of sweetness. I've always said that if I could buy elk at the market, there's a good chance I'd choose it over beef.
