Anyone ever tried snipe? I hear they are good but I have never ate one. I have plenty that visit my duck hole every year I have been thinking about killing a few.

Haha. If duck shells were not so high I would have done shot one.

Pretty neat sounding recipes on that link...very "out there" for us Southerners, but I love trying new types of food.
I've had snipe and woodcock once in distant memory (I was a young teenager). The meat was dark, and it was cooked medium with a strip of bacon wrapped around the whole breast. I liked the flavor a lot, but my dad only killed the single bird and didn't have enough for everyone to do anything but get a taste of it.
I've always heard of people taking birds like those and making some sort of berry sauce (heating it up to make a reduction), and glazing it over with that. Might be something worth trying.

After seeing some of these recipes I am def going to kill a few snipe and try them. I have not seen any at the duck hole yet but there are usually plenty there by Jan.
