I just got this in, I plan to try it out this weekend. I have been making some with seasoning I got at Gander Mt and it was great. You just have to make sure to add Liquid smoke to the meat along with the season pk. I forgot the liquid smoke one time and it was not near as good.

I've never made summer sausage, but after reading the reviews I decided to try this one, because it has casing and most everything needed. I used this one, but added some liquid smoke, fresh crushed black pepper, mustard seeds, diced jalepenos and hi-melt pepperjack cheese (make sure it is hi-melt) and it actually was very good and I will buy more next time—never will I pay a processor an elevated cost to make something this darn simple.
