Let's hear it.. what's everyone's preferred method for making simple tenderloin (for breakfast... with biscuits).
Anything you recommend marinading in overnight? I don't like my meat to be absolutely soaked with a big marinade taste.
Fixing breakfast tomorrow for some family that is visiting and would like to do it up right for them.

I prefer to slice mine near paper thin, start with a few Tb spoons of olive oil and 2-3 Tbsp butter in a frying pan, cook down a large onion halfed and thin sliced(remove and set aside)add a little more butter and a couple dashes of L&P whorchestershire sauce and stir.
Add the meat to a hot pan and start moving it around so it cooks evenly It will cook very quickly sliced this thin, once it is cooked to your liking(don't over cook it) remove meat and simmer the liquid down to about half or until slighty thickened............return meat and onions back into pan and stir altogether.
Ready to serve with homefries or hash browns, eggs and fixin's.

I like mine left whole and marinaded in 1/2 cup Soy sauce 1/4 cup Balsamic vinegar 4 cloves garlic (minced) 1/4 cup brown sugar Overnite and then grilled over medium to high heat ( about 8min on all four sides)....It will stay moist and be very tender . This works great for pork tenderloin also...

Slice about 1/4 inch thick. Rinse off with water and roll in flour and salt and pepper mixture. Add about 1/8 inch of oil to cast iron skillet and bring to medium high heat. Drop battered slices into hot oil and brown on each side about 5 to 7 minutes total. Remove tenderloin and add flour, salt and pepper to hot oil and drippings. Brown flour and add white milk and reduce gravey to desired thickness. Place fried tenderloin on hot biscuits and cover with gravey.
Dig in...

Soak in buttermilk and egg overnight, dust in flour with salt and pepper, brown in cast iron skillet, finish in oven covered with foil at 200 for hour or so and serve. Very tender and not over powered with seasoning.
