Anybody have a good(proven) recipe. I love em, and want to give it a try but don't want to waste my time on a random internet recipe.

My ol' lady has made venison hot tamales before from scratch. I'll ask her about the recipe. If I recall correctly, they were labor intensive. -not difficult, but a good bit of work.

I asked and she said just to find a traditional recipe. You'll have to soak the corn husks etc. if you want to use venison, look up a recipe for Venison Machaca, in which you will slow cook roast meat. No shortcuts in this dish, but it's good as heck!

i get mine made in louisiana. i get 420 for 160 bucks. i bring 18 pounds of deer meat and they make them. 6 per pack vacumm sealed. i get 7 boxes of them. best i ever ate.

Thanks Hawk, the story and recipe on that site is exactly what I have been looking for. My first tamales were from a place called Doe's in Lake Village Arkansas. They have the look exactly like the ones on the "how to" section of that site down to cooking them in coffee cans.
My Mother N Law grew up in Lake Village AR across the River from Greenville, MS. I want to make her some for Christmas.

Well I broke down and ordered 3 dozen some from Scotts http://www.scottshottamales.com/ in Greenville, MS. Never had theirs, but seems hard to go wrong from a company in Greenville, MS.
...still plan on making some but couldn't resist. On-line shopping is just too easy.

When I was a kid living south of Jackson,TN a big treat for us was to go into Jackson to the court square in the evenings and buy tamales from a man that sold them out of a little push cart. My Dad and I would make trips into town in the fall just to walk around the square and eat those tamales. I joined the Navy and went on a 10 month deployment into the Indian Ocean and after the deployment came back home for a couple of weeks to visit. After a few days back home I told my Dad that I'd really like to go to the square one night and get some tamales. He said that won't be happening...the guy wasn't selling them anymore because they had caught him rounding up stray cats and dogs and killing them to use the meat in the tamales. Said it had been going on for years...guess he was increasing his profit margin.
To this day they're the best tamales I have ever eaten. LoL

They are good. Even the wife likes them. I made a sauce with cooking liquid and a. Couple cans of stewew tomatoes. I froze a bunch and have not tried a reheated one yet.

Well I got 5 dozen in the mail yesterday. Will be cooking them on the 25th for Christmas. Well let ya know how it goes. Now I gotta find some great salsa to with it

I took a couple of dozen to work and they were a big hit. I was on the fence as to if I wanted to do them again...but I think I will but try to reduce the recipe by half.
