Why is this a "staple" when it comes to wild game preparation? I hate the flavor it puts in the venison.
Anyone have some good recipes using it they would share?

Dales,Allegro,Soy Sauce,Worcherster all have a lot of salt that helps in preserving jerky.

Thier web Site has good recipes for starters. Just use venison instead of other cuts of meat.It has a very strong flavor. You might want to use 1/2 as much. http://www.dalesseasoning.com/recipes/

No idea why it's so popular. When I first started hunting everyone gave the same advice of, "Soak for two hours in Dale's." Two hours in Dale's makes anything taste like a salt lick.
I use it, but very, very sparingly and even more rarely with game meat. Almost never, actually. I've gotten to where I like an extremely light amount of the low sodium version brushed onto beef burgers while grilling. That's about it.

I don't like it either. I prefer Allegro when it comes to the bottled "marinades".

I have started making my own that tastes similar to allegro. I try to stay away from anything that has high fructose corn syrup in it.

I do not use any of these marinades when cooking my meats. I firmly believe in less is more and when I do use something I use items that go with red meats and enhances the natural flavor—thyme, rosemary, garlic, salt, pepper and olive oil.....use some of these or all of them for a great tasting red meat.

The less salt isnt as bad.i like moores better.jerky requires a lot more of salt or nitrates.if you dont use enuf mold will appear when its leftout for a day or 2.

Thanks! I like the sounds of those herbs. I have a rack full of them.
