I'm a mixture of old and new. UA as a base. Depending upon the temp either fleece or wool (I also have different weights of wool from Army surplus to King of the Mountain) as the insulating layer. I often wear a Walls insulated rain parka and bibs, or an old Woolrich down parka with insulated bibs. When it is really cold I have an insulated wool parka and bibs. I use a nylon wind breaker over the insulating layer and under the outer layer.
Hands and feet are important. As I age I find my feet and hands tend to get cold first. My old felt lined pac boots work just fine combined with liner and wool socks. I also spray my feet with unscented anti-perspirant deodorant to prevent sweating feet.
