Just got back from LA with some tasty wild hog.
Smoker is feeling lonely so I want to fire it up tomorrow.
Need suggestions on what to season/rub the front/1/4-shoulder with. Probably weighs 10-15 lbs. (Bone in front leg 1/4 shank attached) Usually do a Memphis style rub and cook it down to pulled pork consistency. Im open to whatever though.
Also saved out the backbone and neck to smoke up for stews and Redbeans n rice. Do I season the back/neck bones or just toss them on the smoker?
Thanks

If you are going to use the neckbones in stew, I wouldn't flavor them too much. Maybe a little salt and pepper rub before smoking.
Neckbones. Yum!

•1/3 cup paprika •1/4 cup sugar •3 tablespoons black pepper •2 tablespoons salt •2 teaspoons dry mustard •2 teaspoons cayenne •1 teaspoon white pepper I use brownulated brown sugar in my rubs because its dry & will not clump & is fine to leave in a shaker can without it setting up like concrete

Pretty much exactly the mix I've been using for years. Only difference I have is that I use a little more salt (3 tbs) more cayenne (2 tbs) & I add 5 ground bayleaves & 3tbs of garlic powder Rub on your pork & leave it for 4 hrs to 48 hrs. I prefer a much longer marinate than some, generally for pork shoulder I'll marinate it, leave it for 24 hrs & then vacuum seal & freeze it until needed. When I thaw it, I'll do it in the fridge & let it take as long as it takes (48hrs+) This gives a VERY strong flavor that isn't for some, but smoked over apple wood? Fergeddaboudit! IT'll knock your socks off!
