And man, am I tired of cutting deer meat! Started a bit after 9 AM, ended about 4 PM, with a short break or two. All cut, trimmed, and packaged. Need to go weigh it and see how much meat I ended up with.
Sealed backstraps in chunks to be slice at cooking time. Cut a big bowl of stew/soup meat, a pile of fajita strips, couple bags of jerky slices, and some roasts. Oh, and the grind bag which will wait til season's end.

Awesome. My dad did the 3 I got during muzzleloader, except for the backstraps and inside loins. I couldn't do it without him. Enjoy!!!

I would guess he went 105lbs tops.
processing looks great, that is exactly how I do mine, with the exception of I grind my scrap meat, weigh it out and place on foam trays and vac. seal.

Still working on mine. The scraps are the longest part for me. I think im getting a packager for Christmas because all I do now is use plastic wrap and freezer paper.

I'm going to look into trying to grind a breakfast sausage mix, which I've nil experience with. Or possibly even grinding a little pork in with some of the venison to try it.
The straight ground we've had in the past has left a film in our mouths. Don't know if that's something the processor did, or what, but we didn't like it at all. Kind of put us off ground; that's why I tend to cube for stew or soup.

We used to have the Amish grind our deer. We would try to catch them when they were killing hogs or beef. They only charged us $5 a deer, and they would add the fat. Best deer burger you ever had. The guy was cutting a tree, and part of it fell on him. He can't get around now, so they quit processing. Man, I miss them.
