Well, my very first beef brisket was GOOD!
Some good samiches will be coming from this thing over the weekend!

Read about how finicky the brisket a were regarding temps vs time vs final internal temp so, had a good excuse to by a wireless temp probe \:\) had the internal temp set for 186* and was running the smoker temp at 225* - mesquite chips - good smoke ring - final outcome - Fine Eatin!

It's an upright electric with a water pan.. This old smoker has made me seem a far better cook than I am ;-)

The water pan really keeps the meat from drying out - very forgiving for an amateur cook like myself

Brett I thought I might get to ride over your way with a little venison but it seems my processor has been hunting instead of processing :-)

He's thinking he may get it later this weekend but based on his "try" comments I'm thinking he won't be done until next week. Between his hunting and this being a heavy kill week for folks with holiday time off he always gets behind a bit.

Gotcha. I use a home made upright as well but I built a drum smoker. Works great. I turn out some pretty mean shredded pork

This thing has made me seem like a pro at pork!

Now, the beef brisket is not near as forgiving... Had to be real careful with it to keep from producing a high dollar chunk of leather \:\)

I have yet to do a brisket but plan on it. How heavy was the meat And how long did you smoke at that temp? I know a pork butt usually smokes about all night for me

No problem Scott. Between the eye surgery/recovery/healing and now the two leg treatment procedures on Monday and then Dec 3, I'll be pretty much out of pocket for a couple of weeks.


We have really been enjoying what Andy brought us. Even had it for Thanksgiving. First time in 53 years without turkey.

Got approved for the leg treatments on Weds., the last day they could do it w/o rescheduling.

I'm pumped up for those. They will either take care of all of it or free me to have MRI to find the real problem(s).

Got sooooo much to do and needs me legs back.
