I have yet to do a brisket but plan on it. How heavy was the meat And how long did you smoke at that temp? I know a pork butt usually smokes about all night for me
Small one - little over 6lbs - little over 6hrs.. If your temps are right, 1 hour to 1 hour and 15 mins per lb on a brisket.. If you don't have a water pan plan on hourly basting/mopping to keep it from drying out. I kept a spray bottle with apple juice and light cooking oil mixed but only sprayed a few times due to having the water pan.

Brett I thought I might get to ride over your way with a little venison but it seems my processor has been hunting instead of processing :-) He's thinking he may get it later this weekend but based on his "try" comments I'm thinking he won't be done until next week. Between his hunting and this being a heavy kill week for folks with holiday time off he always gets behind a bit. No problem Scott. Between the eye surgery/recovery/healing and now the two leg treatment procedures on Monday and then Dec 3, I'll be pretty much out of pocket for a couple of weeks. We have really been enjoying what Andy brought us. Even had it for Thanksgiving. First time in 53 years without turkey. Got approved for the leg treatments on Weds., the last day they could do it w/o rescheduling. I'm pumped up for those. They will either take care of all of it or free me to have MRI to find the real problem(s). Got sooooo much to do and needs me legs back.
Well, if you're tied up the next few wks we'll just hand tight for now until its better for you. Heck I might even have some ducks by then

I may be a rare breed, but I have never eaten any duck or dove before,lol.
That would be great and best, not sure how these things are gonna go. Something has got to give on the pain though.
I couldn't even get up and walk outside to meet Andy and I hated that. Don't want that to happen again.
Now I gotta get back to drooling over that brisket,lol.
