Who grinds deer without fat and what are some of the recipes you utilize that lean meat? We're trying to broaden the selection of what we have to choose from in the freezer.

The only time I add anything to the ground venison is when I am making sausage or mixing burger for meatloaf.
Otherwise, it is straight up lean meat. I use it for soups, stuffed peppers, etc.

I never have fat added, we use it for chili, spaghetti, sloppy joes, lasagna, and a few other recipes...

I do 80/20 mix with beef fat. Grind medium plate first, then small plate next. The burgers are just fatty enough to grill.

I only add fat to sausage. Everything else stays lean and frozen in 1 lb packages. You can always thaw a pack and add fat at that point.

^^^^^ This. The only time I add anything is for burger patties. I mix 1tsp of dried skim milk powder & 1 free-range egg yolk per pound of meat. It adds enough fat content to stop the patties disintegrating, without altering the flavor of the venison.
