Thinking about getting my wife one for Christmas. What is an iPad all about? What can you do or can not do? She has a Kindle, so would an iPad be that much of a difference? And what is the difference between wi-fi, wi-fi(Verizon), and wi-fi(AT&T)?

Does she have a regular Kindle, or a Kindle Fire? If the Fire - it does most of what an iPad does.
We have a few of them in our house - they are great *consumption* devices, but suck for creating (documents, etc.).
If all she does is *consume* the web, it should be a good fit. But to be honest, The Google Nexus is about half the price and is a superb device as well.

Wife, Daughter, and Son each have one. They love em. Me...I prefer the laptop.

I hate that you cant watch any flash videos on it.
Wifi verizon or at&t.you can get setup on phone bill.
Wifi only will work with wifi access.

It won't ever be fixed, but you can get around it by downloading photon browser from the App Store. It streams flash for you.
