You should be fine, as long as you don't put any rub or seasoning on the outside the oil will be fine for two birds.
I usually heat the oil to @ 400 degs then slowly lower the bird in as the temp. of the oil will drop sharply at first, then adj. burner to maintain the 325 degs. I believe it is 3 mins per lb.

I have fried as many as 8 in fresh peanut oil with no problem. All of them were injected and rubbed down. The key is to not overheat the oil.

I have fried as many as 8 in fresh peanut oil with no problem. All of them were injected and rubbed down. The key is to not overheat the oil.
The oil will last for many birds as long as you do not spill too much and it does not get overheated. I actually strain and freeze mine from year to year, and it lasts me through several birds.

Make sure you put the bird in the pot still wrapped and add water too mark the level of oil that you will need to add to the pot.... Or you will have a volcano eruption...

Yeah. I have fried them before I just have not done two in the Sam oil.

I have cooked as many as four with same peanut oil and each one was seasoned and injected. My kids got where they would just happen to bring an uncooked turkey with them for old Dad to cook for them.
