The ones I've seen on tv look as difficult as shooting a cow. Maybe they're not all that way but they don't look like much of a "hunt" to me.

The only way I would do it would be a free range hunt. There are several Indian reservations that you can hunt free range buffalo on out west.

If I ever draw a WY tag around Jackson Hole I will be ecstatic...but it is a weather dependent hunt and they have to be in your zone. They are free range and spend most their time in the park, so you may spend a long time watching and waiting for them to come down. Once you kill one you better have all your ducks in a row; horses, taxidermist, and processors all need to be on stand by. Awesome meat too!

I would love to kill a bison.

I keep building up my Once In A Lifetime bonus points in Utah for a buffalo hunt.
They have one of the few free range herds, Henry Mountains.
This is an incredibly tough hunt up in the mountains. No standing on the open plains looking dumb for these guys.

American Buffalo by Steven Rinella is a good read for anyone wanting to hunt buffalo.
