This guy does one of the best processing videos I've seen. It's bookmarked as my go-to each season to brush up. I like that he knows his audience (let's pretend we don't have a power saw...).

I do it mostly the same except I remove the backstraps while it is still hanging. Overall it is very informative and easy to follow.

Same here I remove the whole backstrap. I also don't cut off the ribs. All that can be done while hanging.

...on a side note, His other videos on breaking down a steer "Cowpooling" parts 1-13 are interesting as well.

looks good

mine would be a lot easier if I hung mine up. Problem is, I am leery of hanging a deer from a tree in the backyard, in a subdivision with nice neighbors who might not appreciate seeing it.... I will shoot a deer back there early in the morning if I can, but not butcher one...

I watched about the first 3 minutes. Here are things that I noticed:

The brisket meat had already been removed. Depending on the size of the deer, you can get some good stew meat and or grinding meat from there.

This deer was killed during early season. If you skin a deer this time of year, it will likely have a extra layer of fat. Mature deer will oven have a extra layer of muscle and fat on top of what you see in the video. If you take your time, you can also get stew and grinding meat out of this layer. In short, if you skin a deer in the Winter months, you'll have a extra layer to deal with then what you see here. You will also have a brisket/underbelly layer of meat to deal with, so.... you're deer maybe be more complicated than what you se in this video.

The head was cut off too far down the neck. Remove the head at the very base of the skull and you will have additional meat either for stewing, whole roast or grinding.
