My LL Bean cookbook has a recipe for venison sweetbreads, but it does not mention what they look like or how to harvest them when field dressing. Can anyone offer me guidance on how to identify and remove them?

I have a book that tells you how to do it. Ill dig it up. I've had and like sweetbreads, but never tried it from venison.
