Here is one I have been using for yrs. it is fool proof and easy, I have never had a single complaint with it EVER!!!!

Start with a cast iron dutch oven or good stock pot, add @ 3-4 tablespoons of oil, get oil hot and sear the roast on all sides, just until brown, remove and place in crock pot(set on high) in the same pot, add roughly chopped lg onion, 3 Tbls crushed garlic, 3 stalks chopped celery, 4 chopped carrots and cook down until tender, add 1 (16oz)can of diced tomatoes and simmer, While that is simmering, dice up @ 6 med potatoes and add to pot, 1 can of sliced mushrooms and finally 1 can of beef gravy.

Simmer about 5 mins and pour into crock pot over top of roast, let cook 4-6 hrs, pending on size of roast. After cooked, remove roast, cover with foil and let sit for @ 10-15mins then slice or chunk, serve with ingr. in crock pot and warm crusty bread (beer bread is awesome with this as well)

You can add your own ingredients such as snow pea pods and corn if you like, both are great in it as well.

PS: salt & pepper to taste

Fulldraw's recipe is a good basic stew. I don't follow a recipe but that is close to what I do. My favorite cut for a stew is the neck. Before cooking, slice it crosswise into planks (I use a small hacksaw to get through the vertebra).

Take the 15-20 mins and debone it first, much easier to work with. The neck is one of the most underrated pieces of meat. If used in stew/pot roast recipes it is by far the best for texture and flavor you can get.

I think the bones themselves add something...maybe its the connective tissue or the marrow...but I like them in the party.

Lightly brown the roast in a skillet
put roast in CP overnight with water and spices of your choice
1 TBSP of better than bouillon
next day drain water, silver skin and bone
mix your favorite bbq sauce (sweet baby rays)
let it cook for a couple of hours and
add cheese on a sesame seed taosted bun and enjoy
