I can tell you that as far as the IRS goes all the revenue that collect is taxable. Calling it a hobby only hurts you because of your ability to take loses. So if you wanted to be totally legal and may even be able to write off loses if you do buy things. Now as far as TN sales tax I am not sure if a butcher services is taxable. So that you would have to look at the dept of rev. Now what SCN is talking about is the regulation for safe handling of food. This split into two different departments Health and Ag for your side ag is the one.

Relax peopleee. First of all turning a guy in who just enjoys doing this is alittle steep. Give him the info and let him get it set up so it is a legal operation. No proof that he has done anything deemed illegal yet. Also if he is giving away unwanted deer meat there is no crime, I have done that before and given donations to people. Its a hobby, yes he needs to get stuff set up because it needs to be a safe operation, but chillllll. Its now in his hands

Murphy's Law comes in to play with everything. About the time something is fun, it costs ya'. I was thinking it's kinda like recreational sex. It's fun until you don't follow the rules, then it's diapers, sleepless nights and a woman that you don't know fussing at you. Well, maybe it isn't kinda like that too much. Good luck!

And, the European skull mount at $100 is considered taxidermy and would require a taxidermy permit from TWRA.
