So I somehow got talked into entering a chili cook off at work tomorrow. Now I have always made chili, but nothing more than buying mccormics seasoning and adding ingredients listed on the back of the package.
Anyone have any "creative" chili recipes that may be slightly diffrent than the same ole same ole?

You'll get lots of opinions on this, BUT here is my combination:
Cocoa powder (fair amount) ground Sea Salt Smoked salt Pepper Ancho Chili Chipoltle Chili powder Paprika
I have no measured combination, I just mix them together in a bowl until I like the flavor profile. I like the Chipoltle to come through, but I also love Ancho chili. Sea salt will make a big difference. Good luck.

Thanks Poser, And by the way, I really like what you're doing with the blog you started. I've read the book "meateater" and some other books that would fall in the same category and I think you got a good thing goin. So thanks for that as well.

I won the gatlinburg chili cookoff with the following recipe two years in a row.
5 pounds ground chuck salt, black pepper, chili powder, cumin, dried chipotles reconstituted with adobe, and orange juice brown meat and when half way add seasoning and oj. finish browning, drain grease, and then taste. I adjust seasoning on my preference and you only want a slight orange flavor. add in tomato sauce, chili beans, fresh cooked or canned pintos, and black beans. Rinse all beans in cans except chili beans. Add half the amount of tomato sauce you use in water. let simmer for 2-3 hours. Serve in jalapeno cheese bread bowls.
