Got a bunch of Resident Canada geese that fly the farm ponds around my house. About 2-3x a week they pass over my place low. In range low. Hit em with a rock low.
So one of my goals this year is to sit on the back deck with a cup of coffee and a shotgun and hammer a couple geese.
Never had goose before.... What is the best way to cook one? Need recipes please.

It works good in stew, also makes good jerky.

You can treat them just like a duck. The stock is excellent. Also, you can take the skin from their neck and use it as edible sausage casings.

I like it smoked. The other way I cook it is to remove the meat from the bones, tenderize with a mallet, and cut into small chunks. I then use the meat in various recipes like shepards pie and even gyros.

Stuff it with cranberries and walnuts. Rub with molasses thinned with orange juice. Amazing in the oven

That sound good. I might try that. Why do you thin the molasses, though? When I smoke duck, I actually thicken the molasses first.

Any step by step recipes?
I have never had goose, shot a goose, cooked a goose.... Total rookie here.
My attempts at cooking duck....long long ago were pretty bad.

Thats a farm raised goose, not a wild goose. They are totally different. Farm raised goose are full of fat, much like dark meat turkey. Wild goose is extremely lean. If you roast a wild goose until its 170 degrees, you will have a hard rubber ball that tastes awful.
If I were you, I would cook it and see how it turns out before you decide to serve it to your family. If yo don't, your family may never eat goose again in their lifetime.
