My brother in law and I process all of our own. I normally cut more steaks, strips for jerky, and dog food... grind some up but not much.
I like doing it myself better than take it to someone.
Found out I can get more meat off of it myself.

I had a friend take a 120 lb (field dressed) buck to a processor in West TN and he ended up only getting 22 lbs of meat back.
The processor said "You don't get as much meat as you would think"
I guess thinking we were first year hunters.
But I normally can get 35+ lbs off of a small doe.
I just don't trust deer processors after that.

i think you are somewhat right about processors, but i think it depends and varies by each one. as for the 35# of meat of a small doe, you must consider a small doe a big one, which doesn't surprise me being you are in Sumner Co. we killed a big doe in Hickman one year and cut every scrap we could off her. we got approximately 32# of ground meat. 16 of those approximately 2 Lb. bags of meat.

funny you say that.i had a 127lb buck i took in and got 22lbs on it from rick hill in lenoir city.After that i decided to cut my own deer

Getting less than 30% yield is completely and utterly unacceptable. Even 35% is fairly sad.

I typically get 40%-46% of hanging weight. This will vary. Smaller deer will yield a smaller %. A large buck will have a higher % yield. If you blow out both of the front shoulders with a cannon, then less yield.

Our small doe is coming in at about 95 lbs on an average this year. Got a buck at around 140 lbs field dressed.
From the north part of Sumner county were getting decent size this year.

I guess the processors weight it out and just cut off what they want to give you back.
I'm thinking either they don't cut off enough or they might keep some them selves.
Not saying anything bad but last time my friend took a deer to the processor he never said anything about keeping any meat.
I just still don't see how they only get 22# of meat off something over 120 lbs....
