The one time I had beef tongue, I wasn't impressed with the texture. I'm guessing Poser is one of those fellow members...

He made a sandwich with roasted bell peppers and a fried egg on top. It was one of the best tasting meats I'd ever tasted. Think long slow cooked roast. Will definitely be eating this again.

Its possible that it will be a menu item, but in this case, we brought the tongue in because we were talking about cooking up some tongue a couple of weeks ago and the cook overheard the conversation and told us to bring one in. The texture of tongue is just amazing. It is a severely underrated cut of meat in contemporary American culture.

On a serious note, yrs back we saved all the deer tongues and gave them to an old lady down the road, she would pickle them or can them. I never had or tasted one that she prepared before she passed on. But, others told me it was absolutely wonderful. The thought of keeping them from this yrs harvest has me thinking.

Had beef tongue and heart in Louisiana once, not impressed. Had a dove heart stew once too. Not much on innards. However, like anything, its probably all about the way it is prepared.
