has anyone ever made any goose sausage or salami or summer sausage type stuff. Been grinding deer meat. Just wondered about goose. Any recipes? Advice? Flavorings?

I have done both goose and duck sausage. They are both extremely lean which means you need to add fat or it will turn out dry and very dense. I use bacon for the fat and mix it with about 20% bacon to 80% goose meat. I have also tried adding rice as well as bread crumbs to keep the sausage from getting too dense when putting it in casings. If you use enough fat, you may not need it. You should make a few samples to see if you got the mixture correct.
