I know this is a simple one, but can't seem to find what I am looking for online probably typing it wrong. Need a recipe for hot sauce (vinegar, cayenne pepper, lemon juice, etc.) that you find on the table at most independent bbq places in TN. The clear bottles,pepper is in the bottom and you give it a good shake. Not a fan of tomato based "sweet" sauces for pulled pork.

Or are you talking about the vinegar based stuff you have to shake since the solids sink to the bottom?

Pickle some peppers, mix them with vinegar, chili flakes, a little salt, white pepper and anything else that sounds good until you like the taste.
