I believe that is a method of removing the hair and any bugs (ticks, mites,etc) before preparing the squirrel.

They burnt the hair off so they could cook the skin. Looks like he used the skins to make a broth.

Kind of like scraping the hair off a hog when you kill it so you can eat the skin...
