Steak and Pineapple kabobs.

Probably the easiest meal ever.

Cube the pineapple and whatever cut of steak you prefer. load onto bamboo skewers and grill about 3-4 min's per side...you want to char the pineapple slightly. Salt and pepper, enjoy.

I've never done squash and zucchini whole - what are they like when they are done? Is it mushy inside?

I usually slice them into long pieces, but then of course I'm dealing with trying not to scorch them into oblivion...

They are tasty that way, but you have to watch them.

I have done the veggies this way several times, I coat with olive oil and season with salt and pepper. I try to get some char marks and pull them off...they keep some good crispness, but will turn mushy if you cook them too long.

One more important lesson I just learned from this dish regarding leftovers. (never had leftovers before) Store the steak and pineapple separately, or your steak will turn into much due to the acid in the pineapple. \:\(
