I can't recall shooting a rutting buck that was gamey, but I surely have shot one with big, swollen tarsals that I could smell from 10 feet away and after butchering his hams weren't much better. That wasn't gamey. That was straight up stank nasty. And I am very, very particular with my butchering.

Backstraps were fine. Tenderloin was fine. Neck, shoulders and all that other good stuff was glorious. His hams clung to that stink like glue.

I am a little confused. All I have to do to prevent the venison from being gamey is to simply not age it. If I do nothing else, how is that not the natural flavor of the venison? Why is anything other than hanginging it until the meat dries out, not the natural flavor? I love the flavor of venison. I just don't like the funky pungent wang that the meat gets when its been aged.
