I know they aren't found in the wild in TN but there are a lot of pen raised hunts. Whatcha got for recipes?

Hawk gave me some Pheasants last year from South Dakota. We made Pheasant Caccitore several times which is a Italian hunter's stew that you can make with any game. If your pheasants are skinless, you might add a couple of pieces of bacon.

We also made pheasant and dumplins several times which I loved. Again, rather simple and same recipe you would use for any game and dumplins.

If at all possible, take the time to pluck your birds out. Having skin is a game changer with pheasant. You can even use a Red Bull can and do a drunken pheasant if it has its skin. Skinless definitely limits your options as the meat will dry out quickly.

Yea they are skinless...I was thinking about wraping them in Chicken Skin if I decided to grill one. I want to try lots of recipes that require only 1 or 2 birds . I haven't been impressed with any of my previous attempts.

A friend told me he did BBQ pheasant pizza and it was awesome.

A few years I didn't even bring any home. I'm determined to find a good way to cook them because I love to hunt them.

If its skinless, you don't stand a chance in the smoker. You could cover it in chicken skin, but you'll still loose moisture.
